Sunday eggs

Next weekend, sleep in and then treat yourself to a hearty and easy brunch! I made scrambled eggs with spinach and cheese this morning as a healthy breakfast/lunch. And the spinach ends up blending in as you cook, so your little ones might not even notice they're eating spinach in their eggs that is power-packed with iron and other vitamins and minerals.

Add any cheese you want...but I suggest pepper jack if you don't mind some spiciness. The kick helps disguise any leafy taste from the spinach.
Just throw the spinach leaves (about 1/4 of a bag per 6 eggs) and cheese slices in with the beaten eggs before you scramble them.

Scramble, and enjoy!!

I served mine with sausage and english muffins!! Yummy!!
